Traitor Pale Ale

IBU = 33
SRM = 9
OG = 1.056
FG = 1.009
ABV = 5.7% (approx)

Mash @ 150F (60 mins)

8.5 lbs (3.85 kg) Maris Otter
0.75 lb (340 g) Carapils
0.75 lb (340 g) Crystal 20L
0.5 lb (227 g) Victory malt
1 oz (28 g) chocolate malt
1.5 oz (45 g) EKG hops @ 5% AA (60 min)
0.5 oz (14 g) EKG hops @ 5% AA (10 min)
0.5 oz (14 g) EKG hops @ 5% AA (5 min)
0.5 oz (14 g) EKG hops @ 5% AA (1 min)
Windsor ale yeast

Our handy-dandy new Brix refractometer tells me that the sugar content is a hair under 10 Brix, or an OG of 1.039. Somewhat disappointing, so we’re adding in 1.1 lb (500g) of dried malt extract. That should bring the gravity up by another 5 points or so.
