Brewing Update

I have a Festabrew brown ale that I kegged last week. I used Wyeast 1099 (Whitbread), hoping it would turn out like Newcastle Brown Ale. I kegged it last weekend and just tried it now. I have to say that I am quite disappointed with it. Very thin body, no mouthfeel. Moderate maltiness, but almost no hop bitterness or flavour or aroma. The Festabrew website shows 15 IBUs, but I don’t even detect that. I have some East Kent Goldings plugs that I’m going to use to dry hop this, in an attempt to give this beer some character.

I also have Koelsch from Paddock Wood that has spent 1 week in primary and 2 weeks in secondary, yet is very, very cloudy. I’m not sure what to do with it. I could try clarifying it with isinglass. Before I do that, I may just try cold conditioning it for a week to see what that does.
