Yeast bank

Every serious homebrewer should have a yeast bank, where they save samples of favourite yeast strains. A pack of Wyeast costs close to $10 these days, so recycling yeast is a must to cut down on costs. I just took a look inside the Mighty Kegerator and counted seven mason jars of yeast.

  • Safale T-58 (from the Belgian dubbel)
  • Unibroue’s Fin du Monde strain (cultured from a bottle of this luscious nectar)
  • Wyeast 1099 Whitbread ale (from the club IPA)
  • Wyeast 1056 American ale (four bottles, not sure why I need so much)

So whether my next beer is a Belgian, British or American ale, I should be set for yeasts.
